Hazelnut Cream Cookie Recipe
Ingredients
For the Cookie Dough
- 1 cup butter, at room temperature
- ½ cup powdered sugar
- ½ cup hazelnut spread
- 2 cups all-purpose flour
- ¼ teaspoon salt
For the Filling
- ½ cup hazelnut spread
- 2 tablespoons powdered sugar
For the Topping
- 2 tablespoons crushed hazelnuts (optional)
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, beat the butter and powdered sugar together until light and creamy.
- Add the hazelnut spread and mix until well combined.
- Add the flour and salt, then gently mix until the dough comes together. Be careful not to overwork the dough.
- Refrigerate the dough for 30 minutes.
- Once chilled, take walnut-sized portions of the dough and roll them into balls. Arrange them on the prepared baking tray, leaving some space between each one. Gently flatten each ball to form a cookie shape.
- Bake in the preheated oven for 12–15 minutes, or until lightly golden.
- Remove the cookies from the oven and allow them to cool completely.
- To prepare the filling, thoroughly mix the hazelnut spread and powdered sugar in a bowl.
- Spread the prepared hazelnut filling on the underside of half of the cooled cookies. Place the remaining cookies on top and press gently to form sandwich cookies.
- If desired, garnish with crushed hazelnuts.
- Serve and enjoy! Store the hazelnut cream cookies in an airtight container to keep them fresh.
