Peanut Butter Muffin Recipe
Ingredients
- 1¾ cups all-purpose flour
- ¾ cup granulated sugar
- ½ cup milk
- ¼ cup butter, melted
- ¼ cup peanut butter
- 1 egg
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
For the Topping
- ¼ cup peanut butter
- 2 tablespoons powdered sugar (optional)
- 2 tablespoons chopped peanuts (optional)
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin pan with paper liners.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, melted butter, peanut butter, egg, and vanilla extract until well combined.
- Add the dry ingredients to the wet mixture and gently stir until just combined. Make sure there are no large lumps, but be careful not to overmix.
- Divide the batter evenly among the muffin cups, filling each approximately two-thirds full.
- Warm ¼ cup of peanut butter in a microwave-safe bowl until slightly runny. Spoon small dollops over the muffin batter.
- Bake in the preheated oven for 20–25 minutes, or until the tops are golden brown. Insert a toothpick into the center of a muffin to check for doneness; it should come out clean.
- Allow the muffins to cool slightly. If desired, dust them with powdered sugar and garnish with chopped peanuts.
